Ripening comté cheese
The Fort des Rousses used to accommodate about 3500 soldiers. It is an exceptional construction with more than 50.000 m² of vaulted rooms and kilometres of underground corridors. It used to be the 2nd fortress of France. Since 1977 it became the site of ripening comté. The fortress is set 110 high in the Jura and is used today to age more than 100.000 Comté cheeses.
